If I were discribe my Style - Free, Intuitive, Contemporary.

"De Conditioned" - This is a Phrase I use often as I create. My style of food is OUTSIDE of the traditional box. I do though use the classical foundations and recreate the Form within The Form.

I cook exclusively with products following these principles when EVER POSSIBLE.

  • Certified organic products free of synthetic fertilisers, pesticides, antibiotics, hormones, GMOs.
  • Meat sourced from Happy Animal Farms.
  • Sustainably sourced seafood.
  • Raw Whole Cream, Milk, Butter used when ever available.

Gluten Free or Not To Be ? Studies have found gluten-free diets can be seriously nutrient-deficient — low in fiber, iron, folate, niacin, thiamine, riboflavin, calcium, vitamin B12, phosphorus and zinc. That's because so many "gluten-free" products are made with refined, unenriched grains and starches, which contain plenty of calories but very few vitamins or minerals. I feel using ancient grains (soaking/fermenting) we can find our way back to the good old days of GLUTEN FRIENDLY eating .
